Bean salad is a common salad dish composed of various beans -- (green beans and/or yellow wax beans), cooked garbanzo beans, cooked kidney beans and typically onions, peppers or other vegetables, in a vinaigrette broth, sometimes sweetened with sugar. Some bean salads contain barley, pasta noodles or rice.

History

Salads of this type have commonly been used since at least the 19th century[1] for picnics and outings, as they can be preserved with little refrigeration.

Alternate Names and Variations

It is common in some parts of the United States to refer to this sort of salad by the number of types of beans that it contains; e.g., "Three Bean Salad" or "Four Bean Salad." The generic term, "Bean Salad," can also be used to refer to completely unrelated dishes.

Nutrition

Consuming beans adds significant amounts of fiber and soluble fiber to a diet, with one cup of cooked beans providing between nine to thirteen grams of fiber.[2] Soluble fiber can help lower blood cholesterol.[2] Beans are also high in protein, complex carbohydrates and iron.[2] Adults are recommended to have up to two (female), and three (male) servings. 3/4 cup of cooked beans provide one serving.[3]
