Cherry cake

Cherry cake is a cake that has cherry as a principal component of the cake.

In England, the cake is essentially a sponge cake (pound cake) with glacé cherries added before baking,[1] although there are variations. The cherries are usually evenly distributed and suspended within the cake.[2] The cherries used are normally glacé cherries as fresh cherries are too moist and they sink to the bottom.[3] The glacé cherries are halved or quartered, then washed and floured to avoid them sinking to the bottom.[4]

In other countries, fresh cherries may be used, and some as a filling for the cake.
