Cherry cake is a cake that has cherry as a principal component of the cake.
In England, the cake is essentially a sponge cake (pound cake) with glacé cherries added before baking, although there are variations. The cherries are usually evenly distributed and suspended within the cake. The cherries used are normally glacé cherries as fresh cherries are too moist and they sink to the bottom. The glacé cherries are halved or quartered, then washed and floured to avoid them sinking to the bottom.
In other countries, fresh cherries may be used, and some as a filling for the cake.
